Our family started as wagyu merchants in 1962. Five generations of facing cattle, judging meat, and refining the same craft — wholesale, butcher, restaurant.
In my thirties, I visited America, and the "WAGYU" I saw there shocked me. Australian and American cattle being sold as wagyu, people smiling, saying "so this is wagyu?" — and what they ate wasn't the real thing.
As the fifth generation, I made a decision: deliver real wagyu to the world again. Not the over-fattened industrial cuts. Healthy lean wagyu with deep umami in the meat itself. That's the wagyu in this bowl.
